Vegetable Kugel
What you’ll need:

1/2 cup olive oil |

1 cup unpeeled grated Granny Smith apple (approx. 1 medium apple) |

1 cup peeled grated sweet potato (approx. 1 small potato) |

1 cup peeled grated carrot (about 2 medium carrots) |

1 cup matzo meal |
| • |
1 teaspoon coarse salt |
| • |
1 teaspoon baking soda |
| • |
1 teaspoon ground cinnamon |
| • |
1/4 teaspoon freshly grated nutmeg |
| • |
1/2 cup sugar (optional) |
| • |
1/2 cup cottage cheese or ricotta cheese (if desired) |

1/4 cup raisins |
What to do:

Preheat oven to 325 degrees F. |

Line 12 cup capacity muffin tin with muffin tin liners. Set
aside. |

In a medium bowl combine 1/2 cup olive oil, grated apple,
sweet potato, carrot, matzo meal, salt, baking soda, cinnamon,
nutmeg, and sugar. Stir to combine. |

Gently fold in raisins and cheese. |
| 5. |
Divide mixture evenly between 10 of the prepared muffin tins
(2 will be left empty). |

Sprinkle tops with just a pinch of sugar or brown sugar. |
| 7. |
Cover with parchment paper or aluminum foil. Bake 30 minutes. |
| 8. |
Increase oven temperature to 350 degrees F, remove foil and
continue baking until firm and dark golden brown, 5 to 10 minutes
more. Serve immediately. |

May be served with lightly sweetened sour cream (1/2 cup
sour cream plus 1 tsp. brown sugar). |

Cheese may be omitted if desired. |
