Fresh Tomato Salsa
What you’ll need:

4 large ripe tomatoes |

3 whole green onions, thinly sliced |
| • |
1/4 cup finely chopped cilantro (coriander) YUMMY from the garden
too |

3 crushed garlic cloves |
| • |
2 tbsp. olive oil |
| • |
2 tbsp freshly squeezed lime juice (or lemon, but we prefer lime) |
| • |
1 tbsp. finely chopped hot pepper or ½ tsp. red pepper flakes
(optional) |
| • |
½ tsp. each of salt and freshly ground black pepper |
What to do:

Slice tomatoes in half, finely chop. (this should
measure about 3 cups). Some people like to remove the tomato
seeds. |

Place tomatoes in a bowl. Stir in remaining ingredients.
Let stand at least 1 hour. |

Salsa can be refrigerated overnight, but it might lose some
texture. Serve with corn tortillas. Obviously, if your diet
allows, a little sour cream with this is delicious! |
