Soy Tacos
What you’ll need:
Ingredients for Tacos:

1 lb ground soy crumbled (or 1 pound regular tofu
crumbled) |
| • |
1 12 ounce can of diced tomatoes |
| • |
¼ tsp. Cumin |
| • |
¼ tsp. Garlic |
| • |
¼ tsp. Red pepper |
| • |
¼ cup fresh Cilantro, chopped |
| • |
Few dashes of hot sauce |
| • |
OR use prepared Taco Seasoning Mix (watch out for MSG) mixed
with water |
| • |
Tortillas, corn or flour, soft or hard shell shells |
| • |
Optional: Sour cream, chopped black olives, shredded cheddar
cheese, chopped green onions |
Ingredients for Salsa:
| • |
3 large tomatoes, diced |
| • |
½ medium onion, diced (yellow, white, or red) |
| • |
1 finely diced jalapeño pepper |
| • |
½ cup chopped fresh cilantro |
| • |
½ cup corn kernels (roasted corn is best) |
| • |
½ cup black beans (cooked) |
| • |
1 garlic clove (pressed) |
| • |
Juice of 1 freshly squeezed lime |
| • |
Salt and pepper to taste |

¼ Tsp chili powder |
| Refrigerate salsa at least 1 hour. |
What to do:

In a skillet, heat soy crumbles or tofu, and
tomatoes and seasoning (OR water, and seasoning mix.) Mix well
while heating. |

Scoop a small amount of the soy into each tortilla and top
with salsa and sour cream. |

Add chopped lettuce or tomatoes, onions or black olives as
you desire. |
