Red Beans & Rice
What you’ll need:

3 cups cooked brown rice |

½ Tsp Salt |
| • |
1 TBSP olive oil |
| • |
1 small diced onion |
| • |
2 large garlic cloves, minced |
| • |
2 15-ounce cans of red kidney beans |
| • |
4-6 slices of Canadian bacon, chopped (can be eliminated for
vegetarian) |
| • |
1 celery stalk, chopped |
| • |
½ green pepper, diced |
| • |
½ Tsp Tabasco sauce (we like the chipotle flavored!) |
| • |
¼ Tsp cayenne pepper |
| • |
1 cup water |
What to do:

Heat oil in a large skillet. Add onion and garlic.
Stir frequently until onion is tender, about 4 minutes. |

Add beans, Canadian bacon, celery, green pepper, Tabasco
sauce, and cayenne pepper. Simmer, stirring occasionally, until
well heated and liquid has thickened. You can mash up some
of the beans while heating, to help this along. |

Serve over cooked rice. Talk about comfort food! |
