Quinoa Pilaf
What you’ll need:

1 cup quinoa, rinsed |

1 cup water |
| • |
1 cup vegetable broth |
| • |
1 carrot, chopped fine |
| • |
3 large radishes, chopped fine |
| • |
1 bell pepper, chopped fine |
| • |
¼ cup onion, chopped fine |
| • |
2 cloves garlic, sliced |
| • |
2 TBSP olive oil |
| • |
1 bay leaf |
| • |
1 Tsp oregano |
| • |
½ Tsp thyme |
| • |
½ Tsp salt |
| • |
Pinch of red pepper flakes |
| • |
1/3 cup slivered almonds, toasted |
What to do:

Heat olive oil in skillet, add garlic and onion.
Sauté until fragrant and onion is softening. Add water, broth,
vegetables, and spices. Bring to boil. Lower to simmer, cooking
until the quinoa has become soft and translucent, and has soaked
up all the liquid. |

Stir in toasted slivered almonds. Serve! |

Feel free to play with the amounts and ingredients in this
recipe. The more broth you add, the more like soup it will
taste. You may eliminate the broth, and just use water too.
You can swap these veggies for others you have on hand like
broccoli and celery. Even try changing the spices to a more
citrus, cinnamon, and raisin flavor, not using any broth. This
is a good side dish to make when you have to use up a few vegetables,
and that quinoa you bought but still have not used. |
