Mom's Chili
What you’ll need:

½ pound ground beef (increase if you like a meatier
chili) |

2 celery stalks, chopped |
| • |
2 large onions, chopped |
| • |
2 - 10 ½ ounce cans of chopped tomatoes |
| • |
2 teaspoons Mexican seasoning |
| • |
½ teaspoon dried chili peppers |
| • |
½ teaspoon dried cilantro |
| • |
¼ teaspoon salt |
| • |
¼ teaspoon pepper |
| • |
¼ teaspoon cinnamon |
| • |
1 small can of chopped chiles |
| • |
1 teaspoon sugar |
| • |
1 can red kidney beans |
| • |
**Garnish: with chopped black olives, scallions, jalapenos, sour
cream, and/or shredded cheddar cheese. |
What to do:

Brown meat in sauté pan. Drain off excess grease. |

In large stock pot, add chopped celery and onion with about
½ cup water. |
| 3. |
Sauté for about 15 minutes. |
| 4. |
Add seasonings and stir. |
| 5. |
Add tomatoes and cooked beef. |
| 6. |
Cook for at least 45-60 minutes. This can be made in the
crock pot. The longer it cooks, the better it tastes. Use water
to thin if chili is too thick. |
