Mashed Red Potatoes
What you’ll need:
| (increase or decrease depending on how much
you want to make. This recipe serves 4) |

8 large red potatoes or 12 small ones, quartered |

½ cup butter |
| • |
½ tsp Kosher salt |
| • |
¼ cup sour cream |
| • |
Thin with soy milk or regular milk as needed |
What to do:
| 1. |
Fill large stock pot with water. Place potatoes
in the water. Bring to a boil. Boil until potatoes are soft
to a fork – usually about 20 minutes. Drain water off of potatoes. |

Place potatoes in mixing bowl. Add butter, salt, and sour
cream. |

Mash by hand or with hand mixer. |
| 4. |
We also like to add chopped green onions for flavor. |
