Hamburger Goulash with Garlic Mashed Potatoes
What you’ll need:

1 pound hamburger, (95% lean, we like grass-fed organic
beef) |

1 large red onion, chopped |
| • |
1 large red pepper, chopped in chunks |
| • |
1 cup petite frozen peas or fresh peas |
| • |
1 can beef broth |
| • |
1 tablespoon flour (use non-wheat flour if allergic) |
| • |
2 tablespoons sour cream |
| • |
1 teaspoon oregano |
| • |
1 teaspoon parsley |
| • |
3 cloves garlic, crushed (or 1 tsp. garlic powder) |
| • |
½ teaspoon salt |
| • |
½ teaspoon pepper |
| • |
8 red potatoes, washed and quartered |
| • |

1 tablespoon sour cream |
| • |
2 tablespoons butter |
What to do:

Bring 3 quart pan of water to boil. Drop in potatoes
and cook until tender. |

In the meantime, brown hamburger and drain off grease. |

Add vegetables and spices. Saute until al dente. |
| 4. |
Pour beef broth into a 2 cup measuring cup or small bowl.
Mix in flour. Stir mixture into meat/vegetables. Cook on medium-high
heat until mixture thickens. |

Stir in sour cream. |
| 6. |
Strain water from potatoes. Place in bowl with butter and
sour cream and garlic. Mash using a hand mixer until you reach
the consistency you like. |

Serve goulash over mashed potatoes. Serves four. We served
this with a green salad of just dark green leaf lettuce, tomato
wedges and a couple cucumber slices. Delicious and healthy! |
