Chicken-Cilantro Pasta Sauce
| Chicken-cilantro sausage and fresh cilantro
combine to add a savory and tangy punch to this simple sauce.
Fantastic atop pasta, rice or even couscous. While the sauce
simmers and the pasta or grain boils, be sure to wash some
fresh lettuce and vegetables for a quick and easy green salad. |
What you’ll need:

1 lb chicken-cilantro sausage, casing removed, cut
in pieces (or just chicken sausage if you can’t find one with cilantro) |

1–2 Tbsp organic extra virgin olive oil |
| • |
1 onion, chopped |
| • |
1–14.5 oz can organic tomato sauce |
| • |
1–15 oz can chicken broth |
| • |
1 bunch fresh cilantro, chopped |
| • |
black pepper and salt to taste |

To kick it up a little, add chili pepper flakes and garlic to
taste |
What to do:
| 1. |
Sauté chicken sausage pieces and onion in 1 to
2 tablespoons olive oil (as little as possible). |

Add chicken broth and simmer for 15 minutes. |
| 3. |
Add tomato sauce; stir and cover; simmer for 5 to 10 minutes. |
| 4. |
Turn off heat. Add cilantro, black pepper and salt, let steep
for 5 minutes. |

Serve over pasta, rice or couscous. |
