Chicken Chili
This recipe is a little different than the average chili. We think
you’ll love it and make it regularly!
How to tweak for your type:

Lions and Otters omit tortillas, add sliced avocadoes and
black olives! |

Monkeys, substitute 1 can black beans and decrease chicken
to 1 breast, use low fat yogurt instead of sour cream. |

Giraffes, substitute 2 cans black beans for chicken, use
low fat yogurt instead of sour cream. |
What you’ll need:

2 Chicken breasts, organic |
| • |
2 cans of Mexican Stewed Tomatoes, (we like Muir Glen organic) |
| • |
Green chilies, 1 small can, diced |
| • |
1 ½ tsp cumin |
| • |
1 Tbsp chili powder |
| • |
1 tsp paprika |
| • |
1 medium onion, chopped |
| • |
3 cloves garlic, minced |
| • |
Dash of cayenne pepper |
| • |
1/2 tsp cinnamon |
| • |
2 Tbsp fresh cilantro, chopped |
| • |
Tomato paste, 1 can |
Sides:
| • |
Corn tortillas |
| • |
Jack or cheddar cheese, shredded |
| • |
Sour cream |
| • |
Romaine lettuce, chopped |
| • |
1 Medium tomato, chopped |
| • |
Lime wedges |
What to do:
| 1. |
Place chicken in crock pot along with stewed
tomatoes, green chilies, and seasonings. |
| 2. |
Slow cook all day on low (6-8 hours). |
| 3. |
30 minutes prior to serving add tomato paste to the pot and
blend. Shred chicken in the pot. |
| 4. |
Serve with tortillas, sour cream, lettuce, and tomatoes or
your favorite condiments. |
