Noodleless Beef Casserole
What you’ll need:

1-1/2 pounds ground beef (at least 85% lean – organic
if possible) |

1 tsp. olive oil |
| • |
1 cup chopped onion |
| • |
1 green pepper, cut into strips |
| • |
1 red pepper, cut into strips |
| • |
5-6 fresh mushrooms, sliced |
| • |
½ tsp. garlic powder or 1 clove fresh garlic, crushed |
| • |
1 tsp. Kosher salt |
| • |
½ tsp. fresh ground pepper |
| • |
1 quart whole tomatoes with juice |
| • |
1-15 ounce can of tomato sauce |
| • |
8 ounces Mozzarella Cheese |
What to do:

In a large pot, cook ground beef until fully
cooked. Drain off excess grease. |
| 2. |
Add onion and peppers. Sauté for about 1-2 minutes. Add mushrooms,
cook for another minute or so. Add a little olive oil if needed. |
| 3. |
Add tomato products and seasonings. Stir to combine. Add
½ -1 cup water if sauce needs thinning. Heat to boiling, reduce
heat and simmer for 10 minutes. |

Grease 9 x 13 pan with olive oil. |
| 5. |
Spoon a small amount of sauce mixture into bottom of pan
(about ½ cup). |
| 6. |
Layer mixture. Top with cheese. |
| 7. |
Cover and bake at 350 degrees for 45 minutes. |
