Lettuce Wraps
What you’ll need:

1 tablespoon olive, sesame, or peanut oil |

1 pound ground chicken or turkey; tofu if you like vegetarian |

2 tablespoons minced garlic |
| • |
2 tablespoons finely minced ginger (optional) |
| • |
2/3 Cup Teriyaki Sauce |
| • |
Vegetables for filling: Grated carrots, mung bean sprouts, sliced
radish, julienned cucumber, chopped green onions, chopped red peppers,
flaked coconut |

Lettuce leaves, rinsed and dried (we like Boston lettuce best) |
| • |
Hoi sin Sauce or Peanut Sauce |
What to do:
| 1. |
Heat oil in a large skillet. Brown meat/tofu.
Add garlic and ginger and sauté briefly. Add teriyaki sauce
and simmer for 10 minutes. |

Prepare chopped vegetables. Place filling and vegetables
in center of a large platter. Surround with lettuce leaves. |
| 3. |
Serve with sauces. Place a spoonful of the meat mixture and
the veggies in a lettuce leave, wrap, and dip! |
