RECIPE For the Family That Hates Vegetables
I recently attended a family gathering. Now you have to know – this
is a tough crowd. They don’t like vegetables – at all. But some
how I am always assigned to bring the vegetable. So I figure since nobody
is going to eat the vegetable anyway, I will make dishes that are unusual
or weird or just something that I know that I will like because I will be
the only one eating it.
The rest of the family will be munching on an assortment
of processed foods – diet soda, diet jello, fat free
cake, decaf coffee, and canned green bean casserole made with MSG-laden cream
of broccoli soup.
I have taken my barely eaten dish back home with me after many-a gathering.
I could not figure out what they would eat.
Then, wouldn’t you know – they
actually liked the vegetable dish that I brought the other day. They even
emailed me the next day asking for the recipe. Can you believe it?? Of course,
I cannot tell you how I made it because if I have a vegetable dish that my
family likes–I have to
bring it to family gatherings for the rest of eternity. It’s now "my
dish" – "my specialty" – It’s mine and
I cannot share it. Well, okay, I guess I might give you a couple hints…
The
point of this posting is that you must learn to try new things. So many of
our clients are stuck in a rut and get bored with the same old thing. Many
of our Hauser Diet clients will email our Nutrition and Lifestyle coach that
they don’t know what to eat. Their vegetable intake consists of
iceberg lettuce and a little tomato wedge smothered in thousand island dressing
or a spoonful of canned corn. Try something fresh, new and exciting – you
might be surprised like my family – try cooking without a recipe – you
may come up with something really good.

Sweet Potato & Carrot Casserole
What you’ll need:

3 sweet potatoes, peeled and shredded |

3 large carrots, peeled and shredded |
| • |
2 Gala apples, chopped finely |
| • |
½ cup craisins |
| • |
1 cup pecans |
| • |
½ cup honey |
| • |
½ cup Turano sugar |
| • |
½ cup butter, melted |
| • |
1 tsp salt |
What to do:

Mix all of the above together. Bake at 350 degrees for 30-40
minutes in a greased 9 x 13 pan. |

Use less sugar if you like it less sweet. This dish looks weird, tastes
great. |

Use your imagination – I have also made this with figs, raisins, pears,
and other good stuff. |

Gives you a new great-tasting vegetable, lots of natural fiber, a load
of nutrients, and something the whole family will enjoy. |
